Fermentation (12 days) and maturation (6 months) in stainless stell tanks results in a vibrant, lively and animating Sauvignon Blanc with loads of forward fruit and finesse. Ammonia and grassy notes, so typical of this variety, become immediately apparent. A robust wine with a sturdy acid structure it has good aging potential, but it might be too appealing to drink now rather than lay it down. A very good food match.
